Ingredients:
MAIN
3 Pounds medium russet potatoes, scrubbed
1/4 Cup Olive oil
To Taste kosher salt
To Taste freshly ground black pepper
1 Cup shredded cheddar cheese
4 scallions, thinly sliced
DRESSING
2 Cup sour cream
1/2 Cup Mayonnaise
2 Tablespoon chopped fresh chives
1/2 Tablespoon dry mustard
Directions:
1. Get smoker rolling at 275° with Post oak, hickory, or pecan pellet/wood.
2. Coat the potatoes with olive oil and season with salt and pepper.
3. Place potatoes directly on the grill grate and smoke until tender.
4. Once tender, remove from the smoker and let cool at room temperature for 15 minutes. After, place in refrigerator to completely cool.
5. While potatoes are cooling make the dressing by combining the dry mustard, mayo, chives and sour cream.
6. Cut potatoes into 1-inch chunks and mix with cheese. Pour in dressing and combine well. Top with more cheese and scallions. Serve up and ENJOY!
