Smoked Bourbon Chocolate Pecan Pie

Smoked Bourbon Chocolate Pecan Pie

3 tbsp TX Bourbon 3 lg. eggs 2 cups pecans 2/3 cup light corn syrup 3/4 cup dark brown sugar 3/4 cup semisweet chocolate chips 1 tsp vanilla extract 2 tbsp melted unsalted butter

Pie Crust: You do you boo. Wanna go homemade, go for it. I went frozen premade. Get your smoker up to 350-375 degrees with pecan or a lighter smoking wood/pellet like apple or cherry. Put pecans on foil and throw on smoker for 8-10 minutes. Pull and chop into course pieces. Keep the smoker going at same temperature. Whisk together TX Bourbon, eggs, melted butter, corn syrup, vanilla, and brown sugar until all mixed up. Add in chocolate chips and pecans.

Pour filling into pie crust and put on smoker until the center of the pie is set. If the crust is browning to fast you can tent the rim with foil. When the center of pie is set, pull, and let sit for an hour. Serve up and Enjoy!
